1. Greek Yogurt Berry Power Cup

Grab 250g plain Greek yogurt (high in protein), fruits (high in antioxidants) of your choice and nuts/seeds (fiber). Add honey or maple syrup (optional). I have this on hand all the time for breakfasts like these. Just mix them up in your portable container and throw it into a bag! Prep takes only 5 minutes.

Ingredients

  • 1 cup (250g) Plain Greek yogurt
  • 1/2 cup (120g) Low-Fat Cottage Cheese
  • 2tbsp Unsweetened Cocoa Powder
  • 2-3 tbsp Honey or Maple syrup (optional)
  • 1 tsp Vanilla extract
  • 1-2 tbsp Milk
  • Optional: 1tbsp dark chocolate chips or grated dark chocolate you can use for topping.

Add the Greek yogurt, cottage cheese, cocoa powder, vanilla, honey to a blender and mix. Blend it until becomes smooth and creamy. If mousse is too thick, blend in with 1-2 tbsp of milk. Chill and enjoy. You can also make it at night and save time the next morning.
